Plant based tofu scramble made with ground turmeric which is a single origin spice from Ujamaa Spice – best served with chai tea!
This is a delicious plant-based breakfast which showcases the wonderfully aromatic ground turmeric which is one of the single origin spices from Ujamaa Spice.
Tofu scramble is really having its “moment” so hop on the bandwagon and give it a try. Don’t just save it for breakfast though – it’s great at any time of the day!
Serves 1
Ingredients
* 1 tsp olive oil
* 100g firm tofu
* 2.5g (1/2 tbspn ) nutritional yeast
* 1/4 tsp Ujamaa Spice ground turmeric
* 1/4 tsp ground paprika
* 1/4 tsp garlic powder
* 1/8 tsp salt
* 1 to 2 tbsp water
* 100g brown sourdough ( approx. two thin slices or one thick one )
Instructions
- Crumble the tofu into small pieces and set aside
- Take a frying pan and heat 1 tsp of oil over a medium high heat
- Add the tofu and fry for a minute
- Add the nutritional yeast, garlic powder, ground turmeric, paprika, salt and the tablespoon of water to the tofu. Stir thoroughly so that the tofu is completely coated in the spices. Add the extra tablespoon of water if it looks too dry or you like it to be a little bit wetter
- Toast the bread
- When the tofu has warmed through remove from the heat
- Top the toast with the tofu scramble
- Serve immediately with lots of freshly ground black pepper. I’ve served it here with pan fried cherry tomatoes and wilted spinach
